Instructions: Shake ingredients in a shaker. Strain into a glass with fresh ice.
Garnish: Dried pineapple drizzled with chocolate.
Method: Add all ingredients in a shaker with ice, shake for 20 seconds. Strain into a chilled glass full of fresh ice. Be sure to allow space for the pineapple froth to gently settle at the top. Garnish with a chocolate drizzled pineapple.
Tricks of the Trade: Preheat the oven to 200°F. Place a wire rack on a baking sheet. Thinly slice the pineapple crosswise into thin wheels. Arrange the fruit in a single layer on the wire rack. Bake until dry to the touch: Up to 4 ½-5 hours for the pineapples. Once cooled, melt the chocolate of your choice. Using a piping bag, drizzle melted chocolate over the dried pineapple.
