Grilled Pineapple Bajito (basil-mojito)


1.5 oz Kōloa Dark Rum
.75 oz Lemon Juice
4-5 Med/Large Basil Leaves
4-5 Chunks Fresh Grilled Pineapple (½ inch chunks)
1.5 oz Pineapple Juice
.75 oz Honey Syrup (equal parts honey and water)
2 oz Club Soda

Serving: 1

Instructions: Muddle fruit and herbs. Shake all ingredients except Dark Rum and club soda. Pour into glass adding ice if needed. Top with club soda and Dark Rum.

Garnish: Grilled pineapple fan and basil sprig

Method: Muddle basil and pineapple in a shaker. Add crushed ice, honey syrup, and pineapple juice. Shake for 20 seconds. Pour into pineapple glass, fill with ice, gently stir in club soda, and top with dark rum. Garnish with grilled pineapple fan and basil sprig.

Tricks of the Trade: Grilling Your Garnish
While you are firing up the grill for those backyard BBQs or family cookouts, get your grill grate or grill pan to medium high heat. Grill pineapple for 2-3 mins each side or until grill marks appear. This method brings out the sweetness of the pineapple and adds a fun smokey element to your cocktail.
