2 oz | Kōloa Kaua’i Dark Rum |

2 oz | Simple Syrup |
2 Dashes | Bitters |
Garnish: Lemon and cherry
Instructions: Dry shake Kōloa Kaua’i Dark Rum, egg white, simple syrup and lemon juice in a shaker with spring. Shake for 8-10 seconds vigorously to create a froth. Fill shaker with ice and shake until cold, about 15 seconds. Strain through a fine mesh strainer into a rocks glass with ice. Add 3 drops of bitters over the froth.
Tricks of the Trade: Starting with a dry shake is key in creating the frothy texture of a great Sour. When topping a froth with bitters, be mindful of where the dashes fall. This is a great opportunity to create an intentional design.
