Cinnamon and Spice


1.5 oz Kōloa Spice Rum
.25 oz Cinnamon Simple Syrup (1:1)*
3.5 oz Fresh Pressed Apple Juice
1 barspoon or .25 oz Amaretto

Instructions: Add all ingredients together, shake over ice and strain into coupe or martini glass.

Garnish: Apple slices and cinnamon sugar rim.


Combine all ingredients with crushed ice in a cocktail shaker. Shake until shaker is frosty and strain over a large cubed or circular ice cube into a coupe martini glass. Garnish with fresh, layered apple slices and cinnamon sugar rim.

Tricks of the Trade: How to properly rim your glass

Start with a plate or shallow bowl of water and lime or lemon juice. Dip the rim of your glass, then dip directly into your desired ingredients – that can be coarse turbinado sugar (golden crystals on the glass), plain white or brown sugar, coarse sea salt or kosher salt, even chopped candy works. For this recipe, we chose to mix white sugar and cinnamon.
Alternatively, you could cut a lime or lemon wedge and moisten the rim with it and then dip into your ingredient. It’s totally up to you!
