2 teaspoons chopped ginger
½ oz fresh pressed lemon
½ oz simple syrup (1:1)
1 oz Koloa Spice Rum
1 ½ oz ‘Ace’ Pineapple Hard Cider ginger ale ice
pineapple leaf, to garnish
Muddle ginger, lemon and simple syrup. Add the spiced Koloa Rum to the pint glass and shake. Add the pineapple hard cider, then strain into a rocks glass over ginger ale ice. Garnish with a pineapple leaf.
Ginger ale ice: freeze ginger ale into king ice cube molds.
